CORTIJO EL PUERTO ORGANIC ARBOSANA: This monovarietal oil produced from 100% organic Arbosana olives is noted for its fresh and clean aroma, so Cortijo el Puerto selected the duck for the label of this oil, as the duck's presence in freshwater ponds enriches the natural ecosystem. Harvested when green, the oil has a medium robust character, with an aroma of freshly cut grass, banana, tomato, green almond, artichoke and citrus. On the palate it offers hints of olive leaf, green banana and licorice. The complex flavors find balance with the oil's bitterness and its intense and persistent peppery kick. Delicious with both traditional and flavored breads, the oil also pairs well with vinaigrettes, cooked vegetables, fish, white meats, and a variety of desserts like fruit salads, and ice cream.
CORTIJO EL PUERTO ORGANIC KORONEIKI: The owl is known to frequent the olive trees of Cortijo el Puerto during the night, so it lended its visage to the label of this 100% organic Koroneiki extra virgin olive oil. The green olives produce an oil of medium intensity with aromas of apple, tomato, a touch of cinnamon and spices, and even hazelnut and walnut. In the mouth it begins sweet with an aftertaste of dried fruit and olive leaf. The balance arrives with a medium amount of bitterness and clear sensation of pungency in the throat. The oils is lovely with roasted eggplant, zucchini, and other vegetables, white fish and seafood, and also strong flavored cheeses like feta and blue cheese. It also pairs well with Greek yogurt, and can be used for making mayonnaise.
CORTIJO EL PUERTO ORGANIC PICUAL: Because the partridge likes to spend time both in the vegetation that cohabits the groves, and in the hedges formed by the olive trees, Cortijo el Puerto selected the partridge to represent their 100% organic Picual extra virgin olive oil. The Picual olive also finds much of its nuance from these surroundings, with its aromas of freshly cut grass and field flowers, and taste reminiscent of olive leaf. Sweet and fresh on the palate, with moderate bitterness and a pleasant pungency in throat, this Picual oil shows off a good structure as its elements combine harmoniously. An excellent bread oil, especially when eaten with cheese or tomato, this oil also finds a splendid pairing with cooked artichokes, mushrooms, fried eggs, stews, and vegetable pizza.
CORTIJO EL PUERTO ORGANIC PICUDO: Cortijo el Puerto chose the robin to represent their 100% organic Picudo extra virgin olive oil due to the birds' attraction to the biodiversity found on their farm. The oil carries myriad aromas from across the fields, like grass, tomato, green bean, almond, and wildflowers. On the palate the fruity green oil offers flavors of banana and even coffee before finding a balance of bitter and spicy notes at the finish. The complex flavors add nuance to cooked vegetables, fresh cheeses, pasta, poultry, white fish and seafood, and the oil also pairs nicely with ice cream.
