Produced from 100% Correggiolo variety olives hand-picked in October in the hills of Montenero d’Orcia. This oil is deep green in color with a fresh, intensely grassy aroma, predominant of artichoke, cardoon and green almond, enhanced by floral and cherry hints which create an extremely complex bouquet. Its flavor is round and strong with decisive spicy and bitter undertones. Use to contrast the sweet flavor of potatoes, beans, chickpeas and vegetables in general; on red meat or strong-flavored fish; with fresh cheese, such as ravaggiolo and mozzarella; and is excellent on spinach and ricotta tortelli, or with plain rice and pasta with thin slivers of parmesan.
