“We don’t simply produce olive oil. We craft every oil like an artisan tailor creates a custom-made suit.”

Marina Palusci is one of Italy’s most acclaimed olive oil producers, recognized internationally for crafting highly expressive extra virgin olive oils that showcase the extraordinary potential of Abruzzo’s native cultivars and terroir. Rooted in centuries of agricultural tradition and guided by a philosophy that combines biodynamic farming, innovation, and relentless pursuit of excellence, the family estate has become a benchmark for premium olive oil production in central Italy.

The story begins more than three centuries ago in the hills surrounding Pianella, when Marina Palusci’s great-grandfather, Emanuele, worked for the family of the Marquis of Pianella. Through determination, hard work, and a deep connection to the land, he gradually acquired parcels of ancient olive groves, laying the foundations for what would become a multi-generational agricultural legacy.

Over time, the estate passed from Emanuele to his son Mauro, and later to another Emanuele, each generation expanding and strengthening the family’s relationship with the land. Today, Marina Palusci represents the fourth generation of olive growers, overseeing an estate that encompasses approximately 80 hectares of olive groves and 12 hectares of vineyards.

Throughout its evolution, the family has remained committed to a simple but powerful belief: healthy soil creates exceptional products. Biodynamic and organic farming practices guide every aspect of cultivation, while the refusal to use synthetic chemicals reflects a broader philosophy known as Oleosophia—a vision centered on preserving the vitality of the land for future generations.

For Marina Palusci, producing olive oil is not merely an agricultural activity but a responsibility to protect a historical, cultural, and genetic heritage that has been entrusted to the family for centuries.

The Terroir

The estate is located near Pianella, one of Abruzzo’s most historic olive-growing areas, in a region often referred to as Europe’s green heart.

Few places offer such a remarkable balance of environmental influences. Situated approximately twenty minutes from both the Adriatic Sea and the mountains of the Apennines, the landscape benefits from constant airflow, dramatic temperature variation, and an exceptional diversity of natural ecosystems.

The olive groves are planted between 260 and 308 meters above sea level on rolling hills that overlook forests, vineyards, and the surrounding countryside. These elevations provide ideal growing conditions while helping reduce many of the disease pressures often found in flatter agricultural areas.

The soils are predominantly calcareous clay, rich in minerals and particularly well suited to olive cultivation. Combined with significant day-to-night temperature shifts, these conditions encourage the development of high concentrations of phenolic compounds, contributing to the structure, complexity, and longevity of the oils.

Today, approximately 18,000 olive trees grow across the estate. The groves contain a diverse collection of Italian cultivars, including Dritta, Intosso, Leccio del Corno, Frantoio, Moraiolo, and Leccino, among others.

Each variety contributes unique sensory characteristics, allowing the estate to create oils with distinct personalities while preserving the biodiversity that has always defined the region.

The Harvest

Harvest is one of the most important creative decisions made each season.

Unlike producers who pursue a single style of olive oil, Marina Palusci approaches harvest timing much like a master winemaker approaches grape ripening. Different harvest periods are intentionally selected to produce oils with specific sensory profiles and culinary applications.

The season typically begins around September 20 with the earliest harvest of intensely green olives. These oils are characterized by powerful herbaceous aromas, pronounced fruitiness, elevated polyphenol content, and remarkable freshness.

As autumn progresses, harvesting continues during veraison, when the olives display an even balance of green and purple coloration. Oils produced during this stage tend to offer greater harmony and balance, combining freshness with softness and complexity.

The final phase of harvest takes place during late November and early December, when the fruit approaches full maturity. These oils express a gentler profile, with floral aromas, silky textures, and elegant roundness.

Harvesting methods vary according to grove age and tree structure. Many of the estate’s monumental olive trees are still harvested by hand, preserving both fruit quality and the integrity of the ancient trees themselves. Younger groves benefit from tractor-mounted shakers that improve efficiency while maintaining careful handling of the fruit.

At harvest time, the entire team comes together. Family members, experienced workers, and trusted local pickers share responsibility for gathering what Marina affectionately describes as the estate’s “green gold.”

Production & Innovation

The philosophy at Marina Palusci is centered on one idea: every olive variety deserves its own expression.

Rather than following a standardized approach, the estate carefully adapts harvesting decisions, milling techniques, and extraction methods according to the characteristics of each cultivar and the desired style of oil.

The olives are processed using either knife crushers or hammer mills, depending on the sensory profile being pursued. This flexibility allows the team to emphasize specific aromatic, textural, and structural qualities within each oil.

Extraction takes place using advanced dual-phase centrifugation systems designed to preserve freshness, aromatic intensity, and nutritional compounds while minimizing environmental impact.

The estate produces approximately 80,000 liters of olive oil annually, with exceptional years reaching production levels of around 100,000 liters.

Yet volume has never been the primary objective. Marina Palusci approaches olive oil with the mindset of an artisan tailor, carefully crafting each oil to suit a specific purpose and audience.

This philosophy has earned the admiration of chefs around the world, including numerous Michelin-starred restaurants that work closely with the estate and frequently inspire new product development through their requests and collaborations.

The People Behind the Oil

At the heart of Marina Palusci is a profound sense of stewardship.

The family views itself not as the owner of the land, but as its temporary guardian. The ancient olive trees cultivated today were inherited from previous generations, and preserving them for future generations is considered both a privilege and a responsibility.

This perspective shapes every aspect of the company’s work, from biodynamic farming practices to the preservation of native cultivars and the continuous search for improvement.

The greatest challenge, according to Marina, is not competition or production itself. It is the constant pursuit of perfection—the desire to improve every year, refine every technique, and produce the best possible olive oil regardless of previous achievements.

At the same time, the company draws its greatest inspiration from two sources: its centuries-old olive groves and the customers who appreciate the oils. Through constant dialogue with chefs, consumers, and culinary professionals, Marina and her team continue to evolve, finding new ways to elevate quality and meet the expectations of some of the world’s most demanding palates.

Looking ahead, the estate remains characteristically ambitious. New projects are already underway, though for now they remain closely guarded secrets.

The Future

While details remain under wraps, Marina Palusci continues to invest in innovation, biodiversity, and the evolution of premium olive oil production.

The guiding philosophy remains unchanged: preserve the land, respect the trees, listen to customers, and never stop improving.

For a family that has spent centuries cultivating olive groves in Abruzzo, excellence is not a destination but a continuous journey.

“We don’t simply produce olive oil. We craft every oil like an artisan tailor creates a custom-made suit—carefully designed to express the very best of each cultivar, each harvest, and each season.”
