'Il Classico' from De Carlo is made from stone-crushed Ogliarola and Coratina olives harvested in the Bitritto countryside by carefully selected farmers who have worked with the De Carlo family for generations.
The Ogliarola and Coratina olives, harvested straight from the tree, are stone-milled in the company's granite mill within 24 hours.
The resulting oil has a strong olive aroma with vivid hints of artichoke and green almonds. Its flavor is bold and structured — pronounced bitterness and fresh-cut grass with a clean almond aftertaste that lingers on the finish.
