Grape must and wine vinegar aged in wood barrels to create a full-bodied product with an intense, sweet taste and heady aroma.

Description

Created from the best selection of Pedro Ximénez sweet grapes which are air-dried to increase sugar content before under going the 12 year process of acidification, maturation and aging. The vinegar has a dark mahogany color and very well-balanced and persistent taste, with an exceptional flavor of raisins, caramel and nuances of the wood from barrel aging. Try with Full Moon EVOO to create an exquisite dressing for salads, marinades, fish, seafood, and meats such as duck or veal.
