A blend made with 50% Itrana variety olives, the most renowned olive in the Lazio region. Balanced, complex, and tasty to eat, but not overpowering. Light intensity of bitter aromatics, with delicate notes of rocket, good and persistent peppery spiciness of medium intensity.
