Grown in the Brindisi area of Puglia, these artichokes are processed just hours after harvest to preserve their freshness, flavor, and texture.
Only the most tender portions are selected before being grilled and preserved in extra virgin olive oil with garlic, mint, and herbs.
Delicious served on their own as an appetizer, they also make a flavorful addition to pasta dishes, pizzas, and roasted meats.
Don't discard the oil once the artichokes are gone—it becomes naturally infused with artichoke flavor and is excellent for dressings, drizzling, and cooking.

The De Carlo family heritage of the magnificent olives cultivated in their groves can be found in the oldest documents in the archives of Bitritto that date as far back as the 16th century. Today the De Carlo family still produces prized, exclusive oil on its farm in the famous Conca Barese in the Bitritto area.
