This Traditional Balsamic Vinegar of Modena PDO Extra Vecchio is aged for over 25 years in a series of wooden barrels, each made from different types of wood, and matured through annual transfers in naturally climate-affected vinegar lofts. Made exclusively from cooked grape must with no additives, it develops a dense, complex profile with an enveloping aroma and a refined sweet-and-sour balance.
Used strictly raw and in small amounts, it is ideal for enhancing aged Parmigiano Reggiano, fresh strawberries, vanilla ice cream, and delicate risottos such as Parmigiano or pumpkin, added at the end of cooking. It also elevates fine meats and fish, and can be enjoyed on its own after a meal as a digestive or for a moment of pure gastronomic reflection.
